Vidalia Onion Recipes

Vidalia Onion Pie
1 cup Ritz cracker crumbs 3/4 teaspoon salt
1/2 stick butter, melted Dash of pepper
2 cups Vidalia onions, thinly sliced 1/4 cup grated sharp cheddar cheese
2 tablespoons butter Paprika
2 eggs Parsley
3/4 cup milk
Mix cracker crumbs and melted butter. Press into 8-inch pie plate.
Sauté onions with 2 tablespoons butter until clear, not brown. Spoon into pie crust.
Beat eggs with milk, salt, pepper and pour over onions. Sprinkle with cheese and paprika.
Bake in 350-degree oven for 30 minutes or until firm in the center. Sprinkle with
parsley before serving.

Stuffed Vidalia Onion Casserole
3 cups chopped, boiled chicken
1/2 cup rice, cooked in chicken broth
1/2 cup chopped celery
1/2 lb. mushrooms, sliced
6 med. Vidalia onions
1 can mushroom soup
1 tsp. cooking oil
Salt & Pepper to taste
1/4 cup water
Peel and wash onions. Core centers. Reserve enough onion centers,
using 1 cup, to sauté in cooking oil with mushrooms and celery.
Cook rich in chicken broth. In large mixing bowl, add chicken,
cooked rice, salt and pepper. Mix in onions, celery and mushrooms.
Stuff cored onions with mixture. Place remaining stuffing mixture
over and around onions. Combine soup and water over onions and
stuffing. Bake in preheated 350 degree oven until soup is bubbly.
Onions should remain crunchy.
Easy Vidalia Onion Rings
4 Med to Lg. Sweet Onions
1 cup of flour
1 cup beer (or water)
1 egg
1tsp seasoning salt
Vegetable oil
Mix together egg, salt, water and flour.
Slice onion and separate into rings. coat onion rings
with batter. Cook in hot vegetable oil (375 degrees until
golden brown.
Onion Relish
3 lg. Vidalia onions
12 red bell peppers
12 green bell peppers
1 hot pepper
Chop all very fine; put into boiling water and boil 20 minutes.
Drain. Pour boiling water over contents of pot and boil again
15 minutes; drain and add:
1 Tbs. salt
1 cup brown sugar
1 qt. white vinegar
Boil 10 minutes and put in jars and seal while hot

1 fryer, boiled and cut into pieces
1 bag tortilla chips
2 cups cheddar cheese, grated
Preheat oven 350 degrees. Mix mushroom soup,
chicken soup, onion and tomatoes. In baking dish
layer as follows: cooked chicken, tortilla chips, cheese,
soup, onion/tomato mixture, tortilla chips.
Bake at 350 degrees for 35 minutes

1-3/4 cups sour cream
1/4 teaspoon salt
3/4 cup sweet milk
2 cups buttermilk biscuit mix
Sauté onions in 3 tablespoons butter. When onions cool,
add sour cream. Set aside. Combine salt, eggs and milk.
Add to biscuit mix and stir in until moistened. Lightly
fold in sautéed onion and sour cream mixture. Bake in
greased loaf pan or 12x8x2 in. baking pan at 400 degrees
for 30-45 minutes. Time will depend on choice of pan.
